a refreshing twist. tomato lemonade.

What’s a girl to do when life gives her lemons and yellow tomatoes?  She makes the absolute best of it. With inspiration from Food & Wine Magazine, and Kat Kinsman of the Eatocracy food blog I made the most refreshing tomato lemonade you could ever imagine.  Trust me!  Not one time, but so many times I actually lost count.  I even experimented with a peach infused simple syrup (just in case you’re wondering why peaches are in the pic below)but personally prefer the tomatoes solo.  I encourage you to try this recipe if you are lucky enough to still have yellow tomatoes available in your market.  If not, definitely bookmark it for next season.:-)

A Whole Foods produce associate is partially to blame for my tomato lemonade addiction.  It all started one day when there were no yellow tomatoes currently on display in their usual section.  I kindly asked the associate if there were any in the back stockroom.  Ironically enough, he just happened to be unpacking boxes of assorted heirloom tomatoes.   Together, he and I picked out all the yellow ones.  From that day forward, every time I set foot in the produce section during his shift, he would bag up a few pounds of the yellow delights without my asking.   This gesture was hilarious to me but once you make this lemonade, you will understand why I could never say “No thanks, not today.”  As long as he kept twisting my arms (wink, wink) and forcing me to buy the tomatoes…I happily kept making this yummmmy lemonade.

TOMATO LEMONADE
Alterations made to recipe from Food & Wine|August 2011
SIZE:  serve 4

When life gives you both yellow tomatoes and lemons, make this refreshing lemonade.  It will brighten up your day!

MATERIALS AND MEASUREMENTS YOU WILL NEED

1 cup sugar

1 cup water

2 lbs yellow or orange tomatoes

1 cup fresh lemon juice

2 cups ice water

lemon wedges

MODE

In a saucepan bring sugar and water to a simmer over moderate heat.  Stir often to dissolve sugar.  Allow syrup to cool to room temperature.

Puree tomatoes and strain through a fine mesh sieve into a pitcher

Add ice water, simple syrup, and lemon juice to pureed tomatoes. Mix well. Chill thoroughly.

Serve over ice, garnished with lemon wedges.

DESIGNER’S NOTES:  It’s perfectly okay with a mix of yellow and orange tomatoes.  The original recipe added less simple syrup but I’m a southern girl who likes her lemonade and iced tea sweeeet!  Feel free to adjust to your taste.

ACCESSORY: add your favorite spirit.  I spiked mine with vodka:)

FOOD PAIRING:  Fried Chicken and potato salad

TASTING NOTES:  Roy Ayers featuring Erykah Badu Everybody Loves The Sunshine
