fire. work…and a red, white and blueberry champagne mojito

I  didn’t have a track meet this past holiday weekend  and after 5 months of track, track track and still 1 more month of track left, you would think I would’ve been  straight chilln’ and barbecue hopping or something.  Instead, I had this spiritual sort of burning FIRE and desire (ooooh remember that song) in me to do nothing but WORK! Fun work though.  My mind was just a racing and creative sparks were flying all over the place, especially my kitchen.  I worked on five new features for this blog, which by the way, was only suppose to be a place for me to share recipes during my annual Daniel Fast.  It is evolving into so much more and I am having such a blast.  I also worked on the marketing strategy for an exciting new brand. I worked out.  I worked on all my youth football stuff.  I worked on a pretty kick a$$ T-shirt concept for athletically inclined peeps as well as a teen experiential concept I plan to launch this fall.  Yep party people, I worked!  I must say however, my hands down favorite work of the weekend was doing the one thing that makes me giddy…cooking (and sipping).  I tested a few magazine recipes, made a Memphis delicacy, developed a cool little easy-peasy appetizer and muddled up a refreshing FIREWORK of a cocktail…a Red, White and Blueberry Champagne Mojito. Made in the MIA in the U.S. of A.

After four days of work it was time to go play   So on a beautiful 4th of July night, I did just that.  With mojitos and iphone4 camera in tow, I played in the South Beach sand. I stared into the night sky and reflected on the mountains and valleys of my blessed life.  A life where I’m free.  Free 2 be.  Free 2 be the best ME!  God winked at me as I watched the FIRE WORK!

RED, WHITE AND BLUEBERRY CHAMPAGNE MOJITO

SIZE: Serves 1

Now repeat after me…

I pledge allegiance

To the red, white and blueberry champagne mojito

Of the 4th of July

And to the summertime

For which it stands

One refreshing cocktail

Under the fireworks

Effervescently remixed

With mint, limes, watermelon, and champagne

For all!

MEASUREMENTS AND MATERIALS YOU WILL NEED

FOR MOJITO

5 to 8 fresh mint leaves, plus 1 sprig for garnish

4 to 7 blueberries

1 oz of pureed and strained watermelon puree

1 oz Simple Syrup* (see recipe below)

1 lime

2 oz white rum

crushed ice

1 oz chilled champagne

MOJITO MODE

Cut the lime into quarters. Place mint leaves, blueberries and three of the lime wedges in the very bottom of a glass.  Using a muddler or the handle of a long wooden spoon, press the leaves, blueberries and limes.  Add a generous amount of crushed ice.  Pour in rum, the watermelon puree and simple syrup.  Gently stir. Top with the champagne.  Garnish with mint leaf sprig.

 

 

 

FOR SIMPLE SYRUP

Sugar

Water

 

 

SIMPLE SYRUP MODE

Add equal parts granulated water and sugar to a saucepan.  Bring to a boil, stirring constantly.  Once the sugar has dissolved completely, remove the pan from the heat and allow to cool completely.

DESIGNER NOTES: I prefer to make my mojitos in individual glasses.  I used a very slim Vera Wang champagne flute for this 4th of July version but I normally use a big collins or rocks glass.  Mason jars work quite nice too:) Feel free to use less or more simple syrup.  If you don’t like the idea of a mint leaf occasionally touching your tongue as you sip, just muddle everything in a cocktail shaker, shake vigorously and strain into a glass.  Either way it’s delcioso.

      Thank you! You should definitely enjoy a mojito now! I’ve worked in the Spirits industry most of my career so I’ve been groomed to believe that “anytime” is great time to consume your cocktail of choice responsibly. Salud!
